The history of the kitchen

As 1900 dawned, kitchens were the most unpleasant room in the house. That's why people of even modest means (mainly white folks) hired cooks (mainly black folks, at least in the South) to spend time in there.

But curiously, as kitchens grew is size, comfort and convenience, homeowners did not spend more time in them than before, but less. Today a full kitchen makeover of an average home can costs several tens of thousands of dollars - and owners spend maybe five hours per week there and consume more than a fourth of all meals somewhere else.
